These protein baked oats are a simple, healthy, and tasty way to meal prep breakfast for the next 4 days. These baked oat bars are gluten-free, sugar-free, lower in fat, and vegan, while still being packed with protein and flavor.

Ingredients

- 4 medium Banana, overripe
- 2 tbsp Extra virgin coconut oil
- 1 tbsp Vanilla extract
- 1 tbsp Liquid monk fruit
- 1 tbsp Cinnamon
- 1 tsp Baking powder
- 1/2 tsp Salt
- 4 scoop Pea protein powder, unflavored
- 2 cup Rolled oats
Instructions
Cook Mode Off: Prevents screen dimming
- Preheat your oven to 350F. Line a 9" square baking pan with parchment paper, and lightly grease it with oil.
- Mash your bananas in a large bowl with the back of a fork, until smooth. Add the rest of the ingredients to the bowl. Mix with a silicone spatula until fully combined.
- Transfer the batter to your pan.
- Bake at 350F for about 30 minutes, or until a toothpick to the center comes out clean, and the internal temperature is about 205F.
- Transfer to a wire rack. Allow it to cool totally before slicing into 4 large squares.
