The avocado provides healthy fats and protein without the need for butter or oil. It's sweetened with granulated monk fruit instead of white sugar to keep it sugar free and lower in carbs. And using whole wheat flour instead of refined white flour means more fiber, vitamins, and minerals.
This healthy quick bread is a great snack on its own, warm or cold, but is especially good when topped with jam or nut butter. Or double up on the avocado toast with some guac or sliced avocado!

- 2 medium Avocado
- 1 cup Granulated monk fruit
- 3 large Egg
- 1 tsp Vanilla extract
- 1/4 tsp Salt
- 2 tsp Baking powder
- 2 cup Whole wheat flour
Instructions

- Preheat your oven to 350F. Line a 9x5" bread pan with parchment paper, and lightly grease with oil.
- Mash your avocado with the back of a fork in a large bowl. Combine together with the granulated monk fruit, egg, vanilla, salt, baking powder, and whole wheat flour. Mix until just fully combined with a silicone spatula.
- Transfer the batter to the pan, and smooth out the top.
- Bake at 350F for about 50 minutes, or until the top is lightly browned, a toothpick to the center comes out clean, and the internal temperature is about 205F.
- Transfer to a wire rack to totally cool (about 1 hour) before slicing.
