Description
Similar to my Slow Cooker Dried Beans recipe, I'm using a simple soak and slow cook method for an easy carb side. This time it's rolled oats, which can make a delicious side or base to any meal, sweet or savory.
Don't just think of oatmeal as a sweet breakfast. Sure, oats are great when mixed with Greek yogurt and nut butter. But this tasty and nutritious grain can go so much further.
Try replacing the rice or quinoa in any of your slop bowls with cooked oats, or use oats in Congee in place of rice.
You can even make great a risotto alternative using oats, just see my Butternut Squash RisOATto. Brown rice, quinoa, rolled oats, barley, bulgur, etc. are all nutritious whole grains. Mix and match with whatever you got!

Ingredients

- 1 lb Rolled oats
- 8 cup Water
- 1 tbsp Salt
Instructions
Cook Mode Off: Prevents screen dimming
- Add oats to a medium bowl with water and salt. Cover and refrigerate for 4 hours.
- Transfer the oats and all soaking liquid to a large slow cooker. Cover and cook on low for 2 hours, or until creamy and most of the water has been absorbed.
Notes
- 1 lb (454 g) of raw rolled oats is approximately 5 1/2 cups.
- Rolled oats absorb a ton of liquid, and can already be eaten raw. As such, these take significantly less time to make compared to the beans in my Slow Cooker Dried Beans. While the beans soak and cook for 8 hours each, the oats only need to soak for 4 hours and cook for 2 hours.
