Lemon blueberry scones are a classic dessert, snack, or even breakfast addition. But instead of tons of butter or oil, or nutritionally void white flour, these scones only contain healthy fats from wholesome almond flour and complex carbs from oat flour.
Without any refined flour, these scones are also gluten free! The combination of oat flour and almond flour adds healthy fats, fiber, protein, vitamin E, and iron. These sugar free scones are sweetened with granulated monk fruit, get some additional protein from the egg and Greek yogurt, and are flavored with lemon juice and frozen blueberries!

Ingredients

Wet
- 1 large Egg
- 1/4 cup Plain nonfat greek yogurt
- 2 tbsp Lemon juice
- 2 tbsp Granulated monk fruit
- 1 tsp Vanilla extract
Dry
- 1/4 tsp Salt
- 1 tsp Baking powder
- 1/2 cup Oat flour
- 1/2 cup Almond flour
Fold
- 1 cup Frozen blueberries
Instructions
Cook Mode Off: Prevents screen dimming
- Preheat your air fryer to 325F, and prepare an air fryer liner or piece of parchment paper.
- Whisk together the wet ingredients in a large bowl - egg, yogurt, lemon juice, granulated monk fruit, and vanilla.
- Mix in the dry ingredients with a silicone spatula - salt, baking powder, oat flour, and almond flour.
- Fold in the frozen blueberries.
- Divide the dough into 4 even pieces, about 105 g each. Shape into scones, and add to your air fryer liner.
- Air fry at 325F for about 15 minutes, or until lightly golden brown, a toothpick comes out clean, and the internal temperature is about 205F. Let them cool for a few minutes before eating.
Notes
- You may need to cook them in 2 batches if they don't all fit. It's best not to crowd the air fryer.
