- Mix all ingredients together in a large bowl to form a dough.
- Roll into balls, about 32 total, 21 g each, and place onto a plate or cookie sheet.
- Stick a toothpick into each one, and store in the refrigerator.
Notes
- Any nut or seed butter will work, such as almond butter, cashew butter, peanut butter, tahini, pumpkin seed butter, or even homemade pea butter.
- Optionally, you can coat these in melted chocolate. Freeze the pumpkin pops with the toothpick for about 30 minutes before dipping in melted chocolate.
The weights of the pumpkin pops both without and with chocolate are about 21 g and 32 g, respectively, meaning each pumpkin pop holds about 11 g of melted chocolate.
Doing this 32 times means that you would need roughly 2 cup (340 g) of melted chocolate for the entire batch, or roughly a standard size 12 oz (340 g) bag of chocolate chips. However, it's always helpful to have extra melted chocolate, as you will need excess to be able to properly coat them. - Note that adding chocolate adds a significant amount of sugar, fat, and calories, and no longer makes these high protein.
