Description
Here's a great way to use up some extra liquid egg whites. I've modified my Cloud Bread Loaf to make what's essentially a healthy chocolate angel food cake. This healthy dessert is an accidental protein bar without any protein powder, as well as being low in net carbs, low in fat, and high in fiber

Ingredients
Serving(s)
- 1 1/2 cup Egg whites
- 1 tsp Lemon juice
- 1 tbsp Liquid monk fruit
- 1 tsp Vanilla extract
- 2 tsp Cinnamon
- 1/2 tsp Baking powder
- 1/4 tsp Salt
- 3/4 cup Carob powder
- 1/2 cup Powdered peanut butter
Instructions
Cook Mode Off: Prevents screen dimming
- Preheat your oven to 350F. Line a 9" square baking pan with parchment paper, and lightly spray with oil
- In a very large metal bowl, bean your egg whites with lemon juice until stiff peaks form, at least 5 minutes
- Beat in the liquid monk fruit, vanilla, cinnamon, baking powder, and salt on low speed
- Lightly fold in the carob powder and powdered peanut butter, trying to deflate the mixture as little as possible
- Transfer the raw batter to the pan
- Bake at 350F for 30 minutes. Without opening the door, turn off the oven, and let it sit in there for 15 minutes. Remove from the oven, and allow it to cool on a wire rack
- Slice into 9 bars, and store in the fridge. I wouldn't recommend freezing these
Notes
- If you want a frosting, may I suggest using my Quick Nutella, which is made with similar ingredients (carob powder and powdered peanut butter). A triple batch of the Single Serving Quick Nutella should do the trick
