Description
Ohio Buckeye Balls are a no-bake candy featuring a peanut butter center partially dipped in melted chocolate. They're like a homemade Reeses. This is my slightly healthier twist. They're a bit lower in added sugar, but still feature quite a bit from the chocolate chips and honey. Filling
- 1/2 cup Natural peanut butter
- 2 tbsp Honey
- 1/2 tsp Vanilla extract
- 1/4 cup Coconut flour
Chocolate chips
- 1 cup Chocolate chips
- 1/2 tbsp Extra virgin coconut oil
Instructions
Cook Mode Off: Prevents screen dimming
- Add peanut butter to a medium microwave safe bowl. Microwave for 1 minute, until melted.
- Add in the honey, vanilla, and coconut flour. Mix with a silicone spatula to form a dough. Chill the dough in the fridge for 30 minutes.
- Divide the dough into 12 equally sized pieces, about 16 g each. Roll into a ball, and place onto a place. Stick a toothpick into the top of each one.
- Add chocolate chips and coconut oil to a small microwave safe bowl. Microwave in 20 second intervals, stirring in between, until you have a smooth melted chocolate.
- Dip each peanut butter ball into the melted chocolate, coating the bottom and sides, but not the top. Return to the plate, and remove the toothpick. Chill in the fridge for 30 minutes for the chocolate to harden before serving.
