These healthy, homemade apple cider donuts are made in the air fryer instead of being deep fried, making them significantly lower in fat and calories. They're also low in added sugar, being sweetened by real apple cider and a touch of honey. Finally, these wholesome donuts are gluten free, using home ground oat flour instead of refined white flour.

- Place a small pot on a scale, and note its weight. Pour in 1 cup (240 g) apple cider. Bring to a boil over high heat, and cook the apple cider until it reduces to 1/3 cup (80 g).
For example, my pot weighs 324 g, so the pot plus apple cider will weigh 564 g before reducing, and 404 g after. Let the apple cider cool totally. - Preheat your air fryer to 300F. Lightly grease an air fryer donut mold with oil.
- Add the dry ingredients to a large bowl, and whisk together - oat flour, cornstarch, baking powder, cinnamon, salt, nutmeg, ginger, and cloves.
- Add all liquid ingredients to a separate large bowl, and whisk until smooth - reduced apple cider, egg, ricotta, honey, and vanilla.
- Add the wet ingredients into the dry, and mix until fully combined with a silicone spatula.
- Evenly divide the donut batter across the 4 donut molds, about 95 g each.
- Air fry at 300F for about 10 minutes, or until lightly golden brown, and a toothpick comes out clean. Transfer to the fridge, and allow them to chill until fully cooled.
- In a small bowl, whisk together your sweetener and cinnamon to make your cinnamon sugar. Lightly coat each cooled donut in cinnamon sugar, about 1 tbsp (7 g) each. Store in the fridge.
Notes
- I'm using my High Fiber Sugar Substitute as the sweetener in my cinnamon sugar today, but other good options are granulated monk fruit and allulose.
