 Who doesn't love spaghetti and meatballs? Lately I've been obsessed with spaghetti squash, also making Spaghetti Squash Lasagna Boats and Chicken Pad Thai with Spaghetti Squash. But today I'm making spaghetti and meatballs with spaghetti squash, gluten free beef meatballs, and homemade pasta sauce. Feel free to also pair this with some standard pasta as well! This recipe here is very similar to my Zoodles and Meatballs, where that recipe instead uses zoodles instead of spaghetti squash and turkey instead of beef

Ingredients
Serving(s)
Squash
  • 3 lb Spaghetti squash
  • 1 tbsp Basil, dried
  • 1 tbsp Oregano, dried
  • 1 tsp Salt
  • 1 tsp Black pepper, ground
Meatballs
  • 1.3 lb Ground beef, 93/7
  • 1 large Egg
  • 1/3 cup Oat flour
  • 1/4 cup Grated parmesan cheese
  • 2 tbsp Basil, dried
  • 2 tbsp Oregano, dried
  • 1 tsp Salt
  • 1 tsp Black pepper, ground

  1. Preheat your oven to 400F, and line 2 large cookie sheets with parchment paper (one for the squash, and the other for the meatballs)

  2. Cut your squash in half lengthwise. Scoop out the seeds with a spoon, season the squash (basil, oregano, salt, and pepper), and add to the sheet cut side down. Prick the top with a fork

  3. Roast the squash at 400F for about 1 hour, or until fork tender


  4. Meanwhile, in a large bowl, mix together your meatball ingredients - ground meat, egg, oat flour, cheese, basil, oregano, salt, and pepper

  5. Scoop your meat mix into 30 meatballs, about 24 g each. Roll into a ball, and place on the other cookie sheet


  6. Roast the meatballs at 400F for about 16 minutes, or until the internal temperature is at least 160F

  7. Serve your spaghetti squash and meatballs with sauce


 You can optionally mix your spaghetti squash and meatballs with some pasta, either whole wheat or red lentil pasta. Below is the nutrition facts assuming you make 8 oz (227 g, or half a standard size box) of whole wheat pasta:
