I've been loving homemade nice cream lately. Check out my copycat recipes for Cherry Garcia and Chunky Monkey. But today is a Snickers Ice Cream Bar copycat. With just bananas, peanuts, and melted chocolate, you can create a perfectly satisfying and refreshing ice cream bar for a fraction of the fat, added sugar, and calories.

Ingredients

Step 1
- 4 medium Frozen banana
- 2 tbsp Unsweetened almond milk
- 1 tsp Vanilla extract
- 1/8 tsp Salt

- 1/2 cup Peanuts
Step 3
- 1/2 cup Chocolate chips
- 1 tsp Extra virgin coconut oil
Instructions
Cook Mode Off: Prevents screen dimming
- Add frozen bananas, almond milk, vanilla extract, and salt to a food processor. Blend for about 3-5 minutes, scraping the sides every minute or so, until you have a smooth and creamy ice cream.
- Roughly chop your peanuts.
- Add chocolate chips and coconut oil to a small microwave safe bowl. Microwave in 30 second intervals, stirring in between with a silicone spatula, until fully melted.
- Line a 9" square pan with parchment paper. Spread the banana ice cream into an even later on top of the pan. Sprinkle your peanuts over the nice cream. Pour the melted chocolate over the peanuts, and spread to an even layer. Optionally top the melted chocolate with flaky salt.
- Freeze for about 2 hours before slicing into 8 ice cream bars.
