I've been loving homemade nice cream lately. Check out my copycat recipes for Cherry Garcia and Chunky Monkey. But today is a Snickers Ice Cream Bar copycat. With just bananas, peanuts, and melted chocolate, you can create a perfectly satisfying and refreshing ice cream bar for a fraction of the fat, added sugar, and calories.

Ingredients

Step 1
- 4 medium Frozen banana
- 2 tbsp Unsweetened almond milk
- 1 tsp Vanilla extract
- 1/8 tsp Salt
Step 2
- 1/2 cup Peanuts
Step 3
- 1/2 cup Chocolate chips
- 1 tsp Extra virgin coconut oil
Instructions
Cook Mode Off: Prevents screen dimming
- Add frozen bananas, almond milk, vanilla extract, and salt to a food processor. Blend for about 3-5 minutes, scraping the sides every minute or so, until you have a smooth and creamy ice cream.
- Roughly chop your peanuts.
- Add chocolate chips and coconut oil to a small microwave safe bowl. Microwave in 30 second intervals, stirring in between with a silicone spatula, until fully melted.
- Line a 9" square pan with parchment paper. Spread the banana ice cream to an even layer.
- Sprinkle your peanuts over the nice cream, and lightly press in with a silicone spatula.
- Pour the melted chocolate over the peanuts, and carefully spread to an even layer with a silicone spatula. Optionally top the melted chocolate with flaky salt.
- Freeze for about 2 hours before slicing into 8 ice cream bars.
Notes
- Comparing my homemade version to the storebought version per the same 79 g serving, you can see that the healthy version has substantially less fat, added sugar, and calories, with more fiber.
