Cooked Bulgur
Dressing
- 6 tbsp Lemon juice
- 2 tbsp Extra virgin olive oil
- 1 tbsp Minced garlic
- 1/2 tsp Salt
- 1/2 tsp Black pepper, ground
- 1/4 tsp Coriander, ground
- 1/8 tsp Cinnamon
Herbs & Veggies
- 1 bunch Parsley, fresh
- 1/3 cup Mint, fresh
- 1 large Cucumber
- 2 medium Tomato
- 2 large Scallion
Instructions
Cook Mode Off: Prevents screen dimming
- Add broth (or water with a pinch of salt) to a small pot. Cover and bring to a boil over high heat. When boiling, add in the bulgur, cover, and remove from the heat. Let sit for 15-30 minutes, or until the bulgur is tender and all water is absorbed. Remove the lid, and set aside to cool
- In a large bowl, whisk together the dressing ingredients - lemon juice, extra virgin olive oil, minced garlic, salt, black pepper, coriander, and cinnamon
- Chill until ready to serve. It's best to make this the day before to let the flavors come together
