 This recipe is an adapted version of the viral healthy cottage cheese cookie dough made even healthier. It can serve 1 person as a breakfast, or can be portioned and stored in the fridge as a snack. It's super high in protein from the yogurt, cottage cheese, and protein powder, while also containing a lot of fiber (coconut flour), as well as some healthy fats (unsweetened chocolate).   1. I always pre-blend my entire cottage cheese container when I buy it, but if yours isn't blended then you can make this in the food processor

  2. In a medium bowl, mix together your ingredients (except the chocolate). Optionally, add 1-2 tbsp (16-32 g) of any natural nut butter

  3. Finely chop the chocolate, and fold into the batter, or grate some on top. Either roll into balls to save for later, or eat it with a spoon
