
Description
This recipe is an adapted version of the viral healthy cottage cheese cookie dough made even healthier. It can serve 1 person as a breakfast, or can be portioned and stored in the fridge as a snack. It's super high in protein from the yogurt, cottage cheese, and protein powder, while also containing a lot of fiber (coconut flour), as well as some healthy fats (unsweetened chocolate). Ingredients
Serving(s)
- 1/2 cup Plain nonfat greek yogurt
- 1/2 cup Nonfat cottage cheese
- 1/2 tsp Vanilla extract
- 1/2 tsp Liquid monk fruit
- 1/4 tsp Almond extract
- 1/4 cup Coconut flour
- 1 scoop Whey protein powder, unflavored
- 1/2 oz 100% chocolate
Instructions
Cook Mode Off: Prevents screen dimming
- I always pre-blend my entire cottage cheese container when I buy it, but if yours isn't blended then you can make this in the food processor
- In a medium bowl, mix together your ingredients (except the chocolate). Optionally, add 1-2 tbsp (16-32 g) of any natural nut butter
- Finely chop the chocolate, and fold into the batter, or grate some on top. Either roll into balls to save for later, or eat it with a spoon
