Happy Birthday Vic! Do you remember those pistachio chocolate truffles that Sandra got you? Well this is a homemade version of them with just pistachio butter, honey, chocolate chips, and coconut oil!

Ingredients

Filling
- 1/2 cup Pistachio butter
- 2 tbsp Honey
- 1 tsp Vanilla extract
Coating
- 1/2 cup Chocolate chips
- 1/2 tbsp Extra virgin coconut oil
Instructions
Cook Mode Off: Prevents screen dimming
- Line a cookie sheet with parchment paper, and place a wire rack on top
- Mix together pistachio butter, honey, and vanilla with a silicone spatula in a medium bowl to form a dough
- Scoop the dough and roll into 20 balls, about 17 g each. Freeze for 10 minutes
- In a medium bowl, microwave chocolate chips and coconut oil in 20 second intervals, stirring in between, until you have a smooth melted chocolate
- Using 2 forks, coat the pistachio dough in the chocolate, and add to the wire rack. Repeat with all the truffles. Chill for 30 minutes to harden
Notes
- You can also make these truffles sugar free by replacing the honey and standard chocolate chips with sugar free syrup and sugar free chocolate chips
