- Add water to a small mason jar, and microwave for 30 seconds. Stir in whole wheat flour, inulin, and yeast, with a silicone spatula. Cover with a lid, and let it sit at room temperature for 2 hours to form your "starter", until roughly doubled in size and it smells fermented.
- Whisk together dry ingredients in a large bowl - vital wheat gluten, oat fiber, ground flax, psyllium husk, yeast, salt, pure granulated monk fruit, garlic powder, and onion powder.
- Whisk together the wet ingredients in a separate large bowl - starter, eggs, oil, and warm water.
- Add the wet into the dry, and bring together into a dough.
- Knead for 5 minutes. Add the dough to a lightly greased 9x5" loaf pan. Let it rest at room temperature for 1 hour, until roughly doubled in size.
- Bake at 350F for about 45 minutes, or until the top is lightly browned, and the internal temperature is 205F. The bottom of the loaf should sound hollow when tapped.
- Let it cool for 1 hour on a wire rack on the counter before slicing.
