Description
This simple salad combined grilled or baked eggplant, canned chickpeas, and feta cheese to make a delicious salad for a lunch or dinner side. This salad also doesn't have any lettuce if you're into that, and uses a homemade salad dressing. You can also check out any of my other salad recipes or salad dressings

Ingredients

Roasted Eggplant
  • 1 medium Eggplant
  • 1 tbsp Extra virgin olive oil
  • 1/2 tsp Garlic powder
  • 1/2 tsp Onion powder
  • 1/4 tsp Black pepper, ground
  • Large pinch Salt
Salad Veggies
  • 15.5 oz can Chickpeas, drained and rinsed
  • 2 medium Bell pepper
  • 1 medium Onion
  • 4 medium Tomato
  • 1/4 cup Feta cheese
Dressing
  • 1 tbsp White vinegar
  • 1 tbsp Extra virgin olive oil
  • 1 tbsp Lemon juice
  • 1 tbsp Parsley, dried
  • 1/2 tsp Garlic powder
  • 1/2 tsp Onion powder
  • 1/4 tsp Black pepper, ground
  • 1/4 tsp Salt
