Ingredients

Cook the RIce
- 1 cup Brown rice
- 2 cup Water
- 2 tbsp Basil, dried
- 1 tsp Salt
- 1 tsp Black pepper, ground
Rest of Ingredients
- 14.5 oz Diced tomatoes
- 2 tbsp Minced garlic
- 1/4 cup Grated parmesan cheese
- 4 large Egg
Instructions
Cook Mode Off: Prevents screen dimming
- Add rice, water, basil, salt, and black pepper to a medium pot. Cover with a lid and bring to a boil. When boiling, reduce heat to low, and let the rice simmer (covered) until all the water has been absorbed, about 45 minutes
- Remove from the heat, and add in diced tomatoes, garlic, and grated cheese. Stir until fully combined
- Crack in your eggs, and beat with a wooden spoon. Return the pot to the heat over medium, and cook with frequent stirring, until set and creamy, about 5-10 minutes
