Description
It's never too early (or late) for Girl Scout Cookies. Instead of those ultra processed, high glycemic, high sugar, and low nutrient boxed cookies, you can instead make this nutritious snack using apples as a base. The topping consists of unsweetened coconut flakes and almond butter for ample amounts of healthy fats and fiber, as well as honey for natural sweetness. A few of these are just what you need mid-day when you're having sugar cravings and need something to hold you over until dinner

Ingredients

Apple
- 1 medium Apple, gala
Coconut Mix
- 1/3 cup Unsweetened coconut flakes
- 3 tbsp Almond butter
- 1/2 tbsp Honey
Chocolate Drizzle
- 2 tbsp Chocolate chips
- 1/2 tsp Extra virgin coconut oil
Instructions
Cook Mode Off: Prevents screen dimming
- Wash your apple, and cut into thin slices. Cut out the center with a knife
- In a small bowl, mix together coconut flakes, almond butter, and honey until you have a fully combined dough. Place a thin and even layer of the coconut mixture on top of each apple slice
- In a small bowl, add chocolate chips and coconut oil, and microwave for 20 seconds. Stir until fully melted. Drizzle the chocolate on top of the "cookies", and refrigerate until the chocolate is hardened
