Truffle
- 1/4 cup Natural peanut butter
- 1/4 cup Sauerkraut
- 5 tbsp Cocoa powder
- 3 tbsp Granulated monk fruit
- 1 tsp Almond extract
Coating
- 1 tbsp Cocoa Powder
Instructions

- For the sauerkraut, you don't need to drain it; however, try to get as much sauerkraut solids as you can, as opposed to the liquid. Using a fork to lift out the sauerkraut and letting any excess liquid drop back into the contain is sufficient
- In a small food processor, blend together nut butter, sauerkraut, cocoa powder, sweetener, and almond extract until you have a smooth and fully combined chocolate dough
- Add cocoa powder to a small bowl. Scoop out about a tablespoon of the dough (about 18 g each), roll into a ball with your hands, and coat in cocoa powder. Add to an airtight container, and repeat for the remaining 9 truffles
