 What's the secret behind these truffles? Well besides being sugar free, gluten free, vegan, low calorie, and a good source of both healthy fats and fiber, these chocolate truffles contain a secret ingredient that's beneficial to your gut microbiome. I swear you cannot taste it, and you'll never guess what it is (it's not chickpeas)

  1. For the sauerkraut, you don't need to drain it; however, try to get as much sauerkraut solids as you can, as opposed to the liquid. Using a fork to lift out the sauerkraut and letting any excess liquid drop back into the contain is sufficient

  2. In a small food processor, blend together nut butter, sauerkraut, cocoa powder, sweetener, and almond extract until you have a smooth and fully combined chocolate dough

  3. Add cocoa powder to a small bowl. Scoop out about a tablespoon of the dough (about 18 g each), roll into a ball with your hands, and coat in cocoa powder. Add to an airtight container, and repeat for the remaining 9 truffles
