This ground meat and penne baked casserole was my go to for feeding a crowd during my running club pasta parties in college. They're really easy to make a day ahead, and simply just reheat in the pan on the day of your event. Feel free to mix in some chopped spinach as well, or serve with a side of roasted broccoli, such as my Running Club Broccoli

  • 8 oz Whole wheat pasta
Onion
  • 1 tbsp Extra virgin olive oil
  • 1 medium Onion
  • 2 tsp Minced garlic
  • 1 tsp Salt
Meat & Spices
  • 1.3 lb Ground turkey, 93/7
  • 2 tsp Garlic powder
  • 2 tsp Onion powder
  • 1/2 tbsp Oregano, dried
  • 1/2 tbsp Basil, dried
  • 1/2 tbsp Thyme, dried
  • 1 tsp Black pepper, ground
  • 14.5 oz can Diced tomatoes
  • 1/2 cup Shredded mozzarella cheese, low moisture part skim
Topping
  • 1/4 cup Panko breadcrumbs
