Description
It's a little late for pecan pie season, but who cares? A good dessert is a good dessert. These no bake pecan pie bars feature an oat flour based crust, a honey filling, and a crushed pecan topping. It's refined sugar free, gluten free, and can be made vegan if using maple syrup or sugar free syrup.

Ingredients

Crust
- 1 cup Oat flour
- 1 tbsp Extra virgin coconut oil
- 1 tsp Vanilla extract
- 1 tsp Liquid monk fruit
- 1 tsp Cinnamon
- 1/8 tsp Salt
- 2 tbsp Unsweetened almond milk
Filling
- 4 tbsp Honey
- 2 tbsp Almond butter
- 1 tsp Vanilla extract
- 1 tsp Cinnamon
- 1/8 tsp Salt
Topping
- 1 oz, chopped Pecans
Instructions
Cook Mode Off: Prevents screen dimming
- In a large glass bowl, combine together the crust ingredients - oat flour, melted coconut oil, vanilla extract, liquid monk fruit, cinnamon, and salt
- Line a 9x5" bread pan with parchment paper. Lightly wet your hands to prevent sticking, and evenly press the crust into the pan
- Rinse out your bowl, and combine together all filling ingredients with a silicone spatula - honey, almond butter, vanilla, cinnamon, and salt
- Microwave the filling for 30 seconds. Pour into the pan, smoothing it around
- Top with chopped pecans
- Chill in the fridge for at least 2 hours before slicing
Notes
- For the sweetener, you can either use any of the following
- 1/4 cup (84 g) Honey
- 1/4 cup (80 g) Maple syrup
- 1/4 cup (80 g) Sugar free syrup
