 This savory bread is like a cheesy Irish Soda Bread, with all the flavors of French Onion Soup. It takes under 10 minutes to mix together and stick in the oven; no proofing or yeast required! You can use 2 envelopes, or a 2 oz (57 g) box of onion soup mix, or you can make your own mix (recipe below). I've done it both ways, and they both taste great (but only the former is free of added sugar, caramel color, and preservatives)

Ingredients

Onion soup mix
  • 1 tsp Salt
  • 1 tsp Onion powder
  • 1 tsp Garlic powder
  • 1 tsp Parsley, dried
  • 1/2 tsp Black pepper, ground
Dough
  • 3 cup Whole wheat flour
  • 1/2 tsp Baking soda
  • 2 cup Buttermilk
  • 1 cup Shredded cheddar cheese
Top (optional)
  • 1/2 cup shredded Cheddar cheese

  1. Preheat your oven to 350F, and lightly grease a 9x5" bread pan

  2. To make your own homemade onion soup mix, combine together the following:
    • 1/2 cup (60 g) dried onion flakes
    • 1 tsp (6 g) salt
    • 1 tsp (3 g) onion powder
    • 1 tsp (3 g) garlic powder
    • 1 tsp (1 g) dried parsley
    • 1/2 tsp (1.5 g) black pepper
    Alternatively, you can use 2 envelopes, or a 2 oz (57 g) box of onion soup mix

  3. In a large bowl, whisk together the whole wheat flour, vital wheat gluten, onion soup mix, and baking soda until well combined

  4. Pour in the buttermilk, and mix with a silicone spatula to get a dough. Mix in the shredded cheese


  5. Add the dough to the pan, and shape to all sides. Optionally, top with more cheese (not included in nutrition facts)


  6. Bake at 350F for about 60 minutes, or until a toothpick comes out clean, and the internal temperature is at least 205F


  7. Let cool in the pan for 10 minutes before transferring to a wire rack. Let it totally cool before slicing
