Description
It has come to my attention that some heathens prefer the processed no stir peanut butters to the silky smooth nectar of the gods that is natural peanut butter. I kid of course, but if that's you, then you may like this recipe. Instead of just peanuts and salt, typically no stir peanut butter has added sugar (because of course) and hydrogenated oils (solid fat to change the texture). My version here uses coconut oil and honey to achieve the same thing in a healthier way. You can also check out any of my other nut butter recipes.

Ingredients

- 2 cup Peanuts
- 1/2 tsp Salt

- 1 tbsp Honey
- 1 tbsp Extra virgin coconut oil
Instructions
Cook Mode Off: Prevents screen dimming
- In a food processor, blend your nuts until super smooth, scraping down the sides every minute or so. Season with salt, and blend to fully combine it in. Your natural peanut butter is done!
- To ruin it (again, kidding), add in your honey and melted coconut oil. Blend to fully combine, and transfer to a mason jar. Store at room temperature (or in the fridge if you like it firmer and want it to last a little longer)
Notes
- If you want it a little thicker, add 1-2 tbsp (15-30 g) of water. Yes, adding water to thicken a liquid does seem odd, but trust me on this. Imagine if you add water or milk to melted chocolate. The introduction of the liquid causes the fat to seize up and the chocolate will clump. Since nut butter is mostly fat, that being the oils from the nuts, essentially the same thing happens. If you're looking for more of that "no-stir" texture, add some water. Note that it will thicken as it cools though, since the nuts are currently warm from being blended, and thus the nut butter will be looser at its current stage
