Description
Using a leftover avocado and a scoop of vanilla whey, I made this sugar free protein bar that's filled with protein, healthy fats, and fiber. It is a bit shy of my "10 g of protein per 100 calories" qualification for a protein bar. But that's because of the fat of the avocado, so a trade off I'm good with. This recipe only makes 1 bar, but you can easily scale this up and keep a batch in your freezer!

Ingredients
Serving(s)
- 1 medium Avocado
- 1 scoop Whey protein powder, vanilla
- 1/8 tsp Mint extract
- 1/16 tsp Salt
- 2 tbsp Carob powder
Instructions
Cook Mode Off: Prevents screen dimming
- In a medium bowl, mash an avocado with the back of a fork. Mix in protein powder, mint extract, and salt with a silicone spatula to form a sticky dough
- Line a plate with parchment paper. Using kitchen gloves (it's very sticky; you'll need them), shape the mixture into a rectangle. Freeze for 1 hour to harden
