Description
This recipe is what I make most often as a substitute for chocolate chips. They're sugar free, contain minimal ingredients, and much cheaper than buying sugar free chocolate chips. Just mix together equal parts (by weight) of coconut oil, cocoa powder, and granular sweetener for a dark chocolate bar equivalent to about 70%. This recipe makes 6 oz (168 g) of chocolate, or about of 1 cup of chopped chocolate. Recently, I used these chocolate chunks in my Flourless Keto Brownies, but you can swap them for chocolate chips wherever!

- 1/4 cup Extra virgin coconut oil
- 11 tbsp Cocoa powder
- 1/4 cup Granulated monk fruit
Instructions
Cook Mode Off: Prevents screen dimming
- In a small bowl, microwave coconut oil for about 1 minute, until melted. Stir in cocoa powder and granulated sweetener with a silicone spatula until smooth
- Pour the melted chocolate into molds, and refrigerate for 1 hour to harden. Break into large pieces, or chop into smaller chunks
Notes
- If you're going to be baking with this recipe, then you can add 1 large egg yolk into the melted chocolate before chilling it.
Lecithin, a compound found in egg yolks is typically added into chocolate chips to prevent melting while baking. This is the reason why cookies made with chocolate chips have chocolate that holds its shape, while cookies made chocolate chunks experience much more melting and pools of chocolate. Adding the raw yolk to the chocolate will prevent the homemade chocolate from melting as much while baking as compare to standard homemade chocolate.
The raw melted chocolate will be much thicker with the egg yolk, more like a dough. It will still harden and chop the same as a standard bar of chocolate, so follow the same chilling and storing instructions
