
Description
Fajitas are a go to meal, as they're a fun way to build your own food at the table. We'll have some sauteed chicken and peppers, along with rice, beans, cheese, tortillas, lettuce, and Tropical Fruit Salsa. Make tacos, or make it into a bowl, and mix it up as you see fit. Both the chicken and the veggies utilize a Homemade Sugar Free Italian Dressing in their marinades, in addition to lime juice and hot sauce

Ingredients

Veggies
- 2 large Bell pepper
- 1 large red Onion
- 2 tbsp Italian dressing
- 2 tbsp Hot sauce
- 2 tbsp Lime juice
- 1/2 tbsp Extra virgin olive oil
Chicken
- 2 lb Boneless skinless chicken breast
- 1/3 cup Italian dressing
- 1/3 cup Hot sauce
- 1/3 cup Lime juice
- 1/2 tbsp Extra virgin olive oil
- 1 tbsp Thyme, dried
- 1/2 tsp Allspice, ground
- 1/2 tsp Nutmeg, ground
- 1/4 tsp Cinnamon
Instructions
Cook Mode Off: Prevents screen dimming
- Cut your peppers and onions into long thin strips, and add to a large bowl. Mix with the marinade ingredients - Italian dressing, hot sauce, lime juice, and olive oil
- Cut your chicken into small, bite sized cubes, and add to a large bowl. Mix with the marinade ingredients - Italian dressing, hot sauce, lime juice, olive oil, thyme, allspice, nutmeg, and cinnamon
- You can either cook the vegetables and chicken right away, or leave them in the fridge for a few hours to marinate
- Heat 2 large pans over medium heat. Add the peppers & onions to one pan, and the chicken to another, and cover both with a lid. Cook the chicken to 165F, and the veggies until soft and lightly browned, about 10 minutes
- Serve with sides of Classic Rice and Beans, and Oat-Wheat Tortillas, and Tropical Fruit Salsa
