 Instead of a protein bar, why not a protein cookie? This recipe is a direct copycat of the Quest Protein Cookies, having the exact same macros for a fraction of the price and ingredients list. Instead of $2.08 for each storebought cookie, my homemade copycat is just $1.08, about half the price. I'm making just 1 cookie today, but you can easily scale this up to make a larger batch.   1. Preheat your air fryer to 300F

  2. In a small bowl, microwave coconut oil for 30 seconds, until melted

  3. Mix in the protein powder, monk fruit, inulin, baking powder, salt, vanilla extract, and almond milk with a silicone spatula


  4. Transfer your cookie dough to a small piece of parchment paper. Flatten to a 1/4" circle. Press the chocolate chips into the top


  5. Air fry at 300F for about 10 minutes, or until lightly golden


Note
 If you don't mind the extra sugar, net carbs, and calories, you can substitute granulated sugar for monk fruit, as well as use regular chocolate chips instead of the sugar-free variety.
