Description
Instead of a protein bar, why not a protein cookie? This recipe is a direct copycat of the Quest Protein Cookies, having the exact same macros for a fraction of the price and ingredients list.
Instead of $2.08 for each storebought cookie, my homemade copycat is just $1.20, about half the price. I'm making just 1 cookie today, but you can easily scale this up to make a larger batch.

Ingredients

- 1 tbsp Extra virgin coconut oil
- 2/3 scoop Casein protein powder, vanilla
- 2 tsp Granulated monk fruit
- 2 tsp Inulin
- 1/16 tsp Baking powder
- 1/16 tsp Salt
- 1/2 tsp Vanilla extract
- 2 tbsp Unsweetened almond milk
Instructions
Cook Mode Off: Prevents screen dimming
- Preheat your air fryer to 300F
- In a small bowl, microwave coconut oil for 30 seconds, until melted
- Mix in the casein, granulated monk fruit, inulin, baking powder, salt, vanilla extract, and almond milk with a silicone spatula
- Transfer your cookie dough to a small piece of parchment paper. Flatten to a 1/4" circle. Press the chocolate chips into the top
- Air fry at 300F for about 6 minutes, or until lightly golden and slightly puffy
Notes
- If you don't mind the extra sugar, net carbs, and calories, you can substitute granulated sugar for granulated monk fruit, as well as use regular chocolate chips instead of the sugar-free variety
