 These simple and healthy chocolate chip cookie bars require only 4 ingredients: mashed bananas, powdered peanut butter, vanilla extract, and chocolate chips. They're very similar to my No Bake Cookie Bars, where here I'm instead opting for low fat powdered peanut butter instead of traditional peanut butter. Nothing wrong with fat, but good to have options!

  1. In a large bowl, mash your bananas with the back of a fork. Mix in the vanilla extract and powdered peanut butter with a silicone spatula. Fold in the chocolate chips


  2. Line a small pan with parchment paper (mine is 10" x 6"). Spread the batter into the pan. It will be very sticky; be patient. Make sure it's an even thickness and spread to all edges. Optionally top with a few more chocolate chips


  3. Freeze for about 1-2 hours before slicing. Store in the freezer
